What’s New At Teatime Catering?

The Cajun Trilogy is essential to Jambalaya – featured on this weekend’s Friday Holiday party menu. The three critical ingredients to many New Orleans recipes feature bell pepper, celery and onion. In our version of the trilogy within the trilogy, we are using 3 different colors of bell pepper: red, yellow and orange which are slightly sweeter and milder than the classic green. Once the peppers, onion and celery are sauteed along with garlic, we add chicken stock, bay leaf, crushed tomato, chorizo sausage, boneless chicken chunks, shrimp and a healthy shake of Cajun Seasoning (there are many brands on the market to choose from). White rice is added in last 20 minutes and you have a spectacular menu entree that will knock your socks off!
