What does a caterer eat for dinner the day after catering TWO wedding receptions? Whatever is left over – creatively! Stir fried some scallions and diced tomatoes (left from Ruth’s House Salad), snow peas, pasta, feta , sun dried tomato and dill (from Farfelle Pasta Salad w/ Feta, Sun dried Tomato and Dill), cilantro (Linguine w/ Sun Dried Tomato, Cilantro and Parmesan), fresh baby spinach (cute garnish), and additional handful of feta cheese just because I love it. How pretty is this?
