Cool Summer Cocktail to go with Appetizers!

This current summer we seem to be experiencing more hot and humid days than any summer I can recall.  Last night I created a fantastic creation, “Strawberry Balsamic Crush” courtesy of a pal giving me a bottle of gin – which I don’t normally drink.  Hmmm…what to do?  Muddle a ripe fresh strawberry with a couple slices fresh lime, few slices cucumber, 1/2 tsp balsamic vinegar, 1 TB simple syrup, as much gin as you feel you deserve, and tons of crushed ice.  You could probably substitute vodka or rum, but the gin gives this drink the complexity it deserves.  Looks great and it just awesome tasting.  This may take a few moments longer than pouring a gin and tonic, but it completely raises the bar, so GO FOR IT!!
