Catering with…Whoopie Pies! in Washington DC

Most Excellent Snack Ever. 

 
My buddy Art, he LOVES a good Whoopie Pie.  I am from Maine, and he often vacations there.  Years ago he mentioned his travels with the aforementioned  Pie.  Apparently can’t get enough of them.  I’m a caterer, I like a challenge.  This doesn’t involve a kitchen with no water.  It doesn’t involve cooking over a propane burner.  It doesn’t involve a tent during a hurricane. Doesn’t involve getting 175 people through a buffet line in under an hour.  It doesn’t even involve skewering chicken or parking. It does involve butter.  And Chocolate. 
It’s all about cake.
You have your instructions.  You may pause and go get some cake and continue reading.  I’ll wait.
(cookies an appropriate substitute.  Moon Pies are not.  You know who you are)
 
Back?  Good, now Ruth’s WP is made with a Red Velvet Cake recipe, a little additional flour to make the batter slightly thicker, cooked on cookie sheet with parchment paper like big cookies.  When done/cooled, two of the “cookies” are stuck together with cream cheese icing (please use real butter or it’s just not worth the guilty pleasure).  They are insanely delicious.
