This weekend’s wedding reception took place at Westwood Baptist Church in Springfield Virginia.  It has been a hot and steamy July here in the Washington DC metropolitan area with temperatures simmering in the mid 90’s and humidity making it feel like 100+ degrees!  This was the perfect opportunity to offer guests a “cool” menu to beat the heat!

Cheese Cheese Cheese!

While guests were gathering in the fellowship hall, our beverage attendants served a variety of soft drinks, iced tea, and a refreshing Citrus Fruit Punch made with orange, apple and pineapple juice.  On a separate table we served Assorted Domestic and Imported Cheeses and Crackers.  Featured in the above photos are wedges of Brie w/ Cranberry-Walnut-Raspberry Topping, Smoked Edam, Sharp Cheddar, Marble Colby-Jack, and a beautiful Blueberry Vanilla Goat Cheese.

Tomato Basil and Fresh Mozzarella Salad

July could not be a better month for this Tomato Basil and Fresh Mozzarella Salad, also known as Capri Salad.  Local tomatoes are in full bloom here at all the local farmer’s market.  The aroma of the sweet basil should jump off the photo it was so aromatic.  And those tomatoes, oh boy they were scrumptious.  We added a few sliced of chilled cucumber to add a little crunch as well as contrast.
As far as I’m concerned, it’s tomatoes every day for the rest of the month, morning noon and night, and not just for catered events!

Grilled Garlic Lime Chicken Salad

The Grilled Garlic Lime Chicken Salad was the highlight of the buffet reception. I grilled marinated chicken breast, chilled, and diced the pieces.  Added a cilantro lime dressing, fresh lime zest, halved red grapes, shredded Romain lettuce and served on a bed of collard greens.  It was heavenly.  I think we have a winner!  So often folks don’t consider it a “real” meal unless there is something hot being served.  I think we proved that a menu of Chicken Salad; Fresh Dilled Pasta Salad with Sun Dried Tomato-Feta-Snow Peas; Fresh Fruit Arrangement; Capri Salad; and Fresh Rolls fits the bill as PERFECT summer wedding lunch reception!

And now for something completely different:  PIG CANDY!!!  Technically, this wasn’t part of Saturday’s wedding reception, this was an experiment the day before for a dear friend’s birthday.

Slab bacon slathered with brown sugar and smoked paprika, baked in 375 degree oven for 45 minutes.
Served hot it was off the charts.  Served cold it was divine.  Served room temperature it was unbelievable.
How have I managed to live this long and not know THIS existed?!?!?!?
One of the perks of being a caterer:  ALWAYS looking for something good to eat!
