Cornmeal Waffles – Breakfast for Dinner

Every one has heard the expression, “waffles for breakfast”, but how’s THIS for a twist on an old favorite?
Cornmeal Waffles with Cheddar, Chipotle and Scallions
Adapted from a Washington Post Food article November 2012

Ingredients:
3 or 4 scallions
1 TB chipotle in sauce (you can find this in any grocery store)
6 TB butter
1 cup flour
1 cup stone-ground yellow cornmeal
1TB sugar
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
4 ounces shredded sharp cheddar cheese
2 large eggs
1 3/4 cups buttermilk

*place a baking sheet in oven: preheat to 225 degrees (this is to keep waffles warm as you are preparing additional)
*Trim scallions, chop into thin slices. Chop the chipotle en adobo finely.  Melt butter in microwave and cool slightly.
*Whisk together the flour, cornmeal, sugar, baking powder, salt  and baking soda in mixing bowl.
*Add cheese and toss to coat and incorporate, breaking up any clumps.
*Whisk the eggs in large liquid measuring cup until blended, then whisk in the buttermilk and chipotle.  Gradually whisk in the butter.
*Pour the liquid ingredients into the flour mixture, whisking gently until evenly moistened.  Use a spatula to fold in the scallions.  The batter should be thick.
*Grease the waffle iron with nonstick cooking oil spray.
*Pour generous 1/2 cup of the batter in the center of the heated waffle iron.  Spread the batter with spatula to within 1/2 inch of the edges.  Close and bake until deep golden brown.  Transfer to the baking sheet.  Repeat to use all the batter.

Serve with a fried egg and enchilada sauce, red or green store bought is easy, dinner in 35 minutes.
Alton Brown of the Food Network warns against purchasing any cooking equipment that can only be utilized for one purpose, such as the waffle iron.  But you know what?  You can whip these out for dinner, and you could even add some waffle iron potato pancakes but using left over or store bought mashed potatoes and spread them in a buttered iron, close and voila!  Crazy waffle potato pancakes!

These are also great leftovers.  As a caterer who keeps some pretty crazy hours, coming home late from a wedding reception, I can pop one of these right into the toaster and eat as a midnight snack, doesn’t need sauce or butter or ANYTHING, it’s just really tasty all by itself.
