Nothing suggests comfort more than soup, hot OR cold. Serving shooters or small cups of soup as passed appetizers is always a fun addition to any catered event! When the weather turns cold, one of our favorite soups to serve guests is a butternut and corn chowder (third photo above). This is a gluten free option, as well as vegetarian and vegan. It’s a perfect option on a cool autumn afternoon with hints Thanksgiving right around the corner. We served the shooters with mini bread sticks for the added crunch.
Now, cool weather doesn’t immediately bring a cold soup to mind, but the above Roasted Gazpacho with Poblano knocks it out of the park. We slow roasted vine ripened tomatoes, garlic, poblano peppers, sweet onions and red bell pepper until slightly charred and aromatic. Pureed with fresh cucumber, wine vinegar, cilantro, tomato juice, bread and olive oil it is refreshingly light and satisfying. We are serving this as a passed appetizer for tomorrow’s wedding reception that is featuring more of a Latin theme.
Guests are always amazed to see soups served in such a whimsical manner, and with such a small portion being served no one’s appetite is dampened!
