Citrus and Strawberry Spring Salad

“A little treasure for the engineer/train hopping hobo in all of us” is how the Fairfax Railroad Train Museum describes it self www.fairfax-station.org/
Nestled just off route 123 in Fairfax Station, this little nugget of a venue is a charming space for a smaller event.  Teatime does regular investment dinners here with Andy Cook of Morgan Stanley.

For a recent winter menu I created a Mixed Green and Baby Spinach Salad w/ Clementine Wedges, Strawberries and a Balsamic Vinaigrette.  You could toss in a handful of feta or pine nuts for more bite and crunch!  Teatime loves to marry flavors in salads:  sweet and sour includes dried cranberry/balsamic,  mango/red wine vinegar.  Salty and crunchy:  feta/pine nut, Gorgonzola/pecan, Parmesan/crouton.  The BEST combination?  All of them together!  Greens/sweet (tomatoes and/or fruit), sour (vinaigrette), salty (cheeses), and crunchy (nuts or croutons).  During the summer we take these same components and top it with grilled corn on the cob shaved OFF the cob still hot, and some sliced chicken or flank steak just off the grill as well.
AWESOME!
