Catering for the holidays!

Teaspoon of actual snow.  I believe this is total accumulation Washington DC 2012-13.

It’s Beginning To Look A Lot Like Christmas!!  Well, technically it’s FOUR days after Christmas, but it started snowing this morning and my mind starts thinking about something warm and savory and..BISCUITY!  Hmmm, how about mixing sweet potatoes, pecans, corn meal and maple?
1 1/3 cup flour
2/3 cup yellow corn meal
1 stick butter
1 TB baking powder
salt
   Process that in food processor till coarsely ground
ADD:
1 cup mashed sweet potato
1/2 buttermilk
1/4 cup maple syrup (I actually used half syrup and half honey)
1/2 cup toasted pecans
Process till just comes together, work as little as possible on into 1/2 ” thick rectangle (or circle, or any old shape really)
I used little bitty biscuit cutter to make itty bitty biscuits, more fun that way, you can split them and fill them with ham or just more butter.
425 degrees for 10 minutes or till slightly brown. (Use parchment paper to prevent sticking)

THEY ARE AWESOME.  By the way.  The cornmeal gives them an unexpected crunch, and the sweet potato marries perfectly with the maple.  I didn’t even get them to a cooling rack.  Just ate them right off the parchment paper.  Something like 15 in a row but who’s counting?
