Breakfast idea? Try the donut muffin!

Recently this particular caterer discovered Portland OR and my step son introduced me to a wonder: the Donut Muffin. What? Shaped like a muffin, tastes like an old fashioned baked donut.
It’s been kicking around in the back of my mind ever since. And as opportunity is always about to knock, I have a bride and groom looking to book a wedding reception at St. Francis Hall in Washington DC www.myfranciscan.org
and the bride want brunch with LOTS of breakfast items on her catered menu. And a pastry basket. So.
There really are recipes everywhere on line. Here’s a basic recipe. The trick is right after you take them out of the oven, dip them in butter then in a cinnamon-sugar dusting.
Ingredients
- 1/2 cup white sugar
- 1/4 cup butter melted
- 3/4 teaspoon ground nutmeg
- 1/2 cup milk

- 1 teaspoon baking powder
- 1 cup all-purpose flour
- 1/4 cup butter
- 1/2 cup white sugar
- 1 teaspoon ground cinnamon

- Preheat oven to 375 degrees F (190 degrees C). Grease 24 mini-muffin cups.
- Mix 1/2 cup sugar, 1/4 cup butter, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
- Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
- While muffins are baking, place 1/4 cup of melted butter in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture. Let cool and serve.

As an alternative yummy option, fill you muffin tin partially, add a dollop of your favorite jam or jelly, and top of the muffin tin with another spoonful of batter and bake as usual. I’m always a fan of gilding the lily!
