What’s New At Teatime Catering? Bacon and Scallops!

Bacon Wrapped Scallops pose a challenge with proper cooking technique. Cook it enough for the bacon to be crispy: the scallop is rubbery. Cook it enough for the scallop to still be tender: the bacon is rubbery and undercooked. I experimented with this technique – precook the bacon, chop it coarsely and top the scallop with a generous amount. Cooked only long enough for the scallop to remain tender and a colorful tooth pic inserted sideways, this was the best of both worlds, a tender juicy sea scallop with a delicious smokey bacon topping. We couldn’t get them out to the guests fast enough! But then again, what doesn’t taste better with bacon!
