What’s New At Teatime Catering? Roasting Peppers!

Farmer’s Market Bell Peppers

Have you ever tried roasting your own peppers?  It’s really easy!  If you have a gas or charcoal grill you can roast them, turning often, until they are blackened and charred all over.  Alternately, you can hold one with a pair of tongs over a gas burner in your own kitchen (turn on that exhaust fan!) until charred.  Then you place the hot pepper in a plastic bag for at least 10 minutes, and the charred skin will slip right off.  You then have the most marvelous of ingredients:  you can puree it for a sauce, you can chop it and add to a salsa, you can slice it atop a summer salad.  The red bell pepper lends itself to this technique best, but the yellow or orange bells can work with a milder flavor as a result.  We puree it in a food processor and add a little mayo, Dijon mustard, garlic, parsley and the result is our famous roasted red bell pepper sauce that we serve with our Silver Dollar Crab Cakes.
